This is a dish which i slightly modified from the one by Jamie Oliver, spiced up for the south Indian taste buds!
Another true example of how lovely broccoli can taste and a proof that it cannot be ignored.
Ingredients
- Broccoli – One Flower – Separated as small florets
- Baby Corn – 4 Sticks – Diced
- Curd – 200ml
- Jeera Powder – 1 Tbsp
- Chilli Powder – 1 tsp
- Salt – to Taste
- Jeera – 2 Pinches
- Mustard Seeds – 2 Pinches
- Bengal Gram – 1/2 tbsp
Bring water to boil in a saucepan, add salt and put in the broccoli and baby corn and cook for 3 minutes
Drain the water and fish out the broccoli and baby corn, (keep the water, makes a lovely stock for other dishes)
Shock them with cold water to stop cooking further and to retain the crunchiness
In a separate boil, beat the curd till it becomes soft and slightly runny, add salt, chilli powder and jeera powder.
Now take a kadai, add some refined oil in it, temper the mustard seeds, jeera seeds and bengal gram. Once they are tempered, add the broccoli and babycorn, toss them for a few mins and take it out to the serving bowl.
Pour the beaten curd on the cooked broccoli and baby corn and serve! Simpppple!
